Thai Curry Beef Soup

This warm and fragrant Thai favourite features beautifully grilled beef, sweet red bell peppers and tender-crisp snap peas. The memorable broth with notes from garlic, red curry paste and coconut milk will have you asking for seconds.



1 lb (0.5 kg) Ontario sirloin tip steak
Salt and fresh cracked black pepper
1 tbsp (15 mL) olive oil
1 small onion, diced
1 large red bell pepper, julienned
2 cloves garlic, minced
1 tbsp (15 mL) red curry paste
1 can (13.5 oz/398 mL) coconut milk
4 cups (1 L) sodium-reduced chicken broth
1 cup (250 mL) snap peas, halved
6 oz (170g) mung bean noodles


Preheat grill pan or barbecue to medium-high heat.

Season both sides of steak with salt and pepper. Grill for 4-5 minutes on each side, or until desired doneness. Remove to cutting board and let rest before thinly slicing steak against the grain. Cover with foil, set aside.

Heat oil in a large saucepan over medium-high heat. Add onion and pepper; cook 2-3 minutes until softened. Add garlic and cook 1 minute, stirring frequently. Add red curry paste and cook 1 minute, until fragrant. Add coconut milk and broth, stir until well combined. Add snap peas and bring to a boil. Reduce and simmer 10 minutes.

While curry simmers, bring a large saucepan of water to a boil. Add mung beans noodles and cook 4-5 minutes, or until softened. Pour into a strainer or colander and run the noodles under cold water. Divide noodles between 4 serving bowls.

To serve, ladle curry over mung beans, top with sliced steak, and garnish with cilantro and a squeeze of lime juice.


  • Mung bean noodles, also referred to as Chinese noodles, glass noodles, or cellophane noodles, are transparent noodles made from mung bean starch and water. They can often be found in the international aisle of your local supermarket.
