Beef Souvlaki with Grilled Watermelon & Halloumi

Description

A little bit of sweet, a little bit of spicy and a whole lot of delicious. Premium Ontario top sirloin steak combines with two unlikely heroes – watermelon and halloumi – in this mouth-watering masterpiece.


Ingredients

  • 400g (14oz) top sirloin steak, cut into large chunks
  • 1 ½ tsp kosher salt, divided
  • ½ mini watermelon, cut into bite-sized chunks
  • 300g (10.5oz) halloumi, sliced and cut into thirds
  • ½ red onion, cut into bite-sized chunks
  • 2 cloves garlic, peeled and thinly sliced
  • ¼ cup olive oil
  • 2 tbsp red wine vinegar
  • 1 lemon, juiced
  • 1 ½ tsp dried oregano
  • 1 tsp crushed red pepper flakes

Hot Peppers with Honey

  • 2 green pencil hot peppers, thinly sliced
  • ¼ red onion, diced
  • 1 cup white vinegar
  • 1 tbsp sugar
  • 1 tsp kosher salt
  • ⅓ cup honey

Instructions

Place the steak in the bowl and add about ½ tsp of the salt. Massage the salt into the beef and set it aside while you prep the rest of your ingredients.

Place the watermelon, onion, and halloumi in a separate bowl and set them aside as well.

In a small bowl, whisk to combine the olive oil, vinegar, lemon juice, oregano, and crushed red pepper flakes. Pour half of the marinade over the steak and the other half over the watermelon, halloumi, and onion. Toss to coat. Let marinate for 2 hours. (see note 1)

While the beef is marinating, make the Hot Peppers with Honey.  Place the peppers in a medium-sized bowl and add the red onion.

Pour in the white vinegar, salt, and sugar. Give it a stir and set it aside to pickle at room temperature for 2 hours.

Thread the steak, watermelon, halloumi, and red onion onto a series of stainless steel skewers or bamboo skewers that have been soaked overnight. (see note 2)

Heat a oiled charcoal or gas grill until smoking. Add the skewers and grill for 2-3 minutes aside or until the steak reaches your desired doneness. Transfer the skewers to a platter and set aside.

Transfer the hot peppers from their vinegar solution and add them to the honey. Give them a quick stir and spoon the mixture over top of the skewers. Garnish with fresh mint and serve immediately.


Notes

Note 1: You can marinate your beef for longer than 2 hours but don’t marinate your watermelon for any longer or it will start to break down.

Note 2: You can add the ingredients in any order you wish but try to bookend the skewers with pieces of red onion and make sure you add 2-3 pieces of steak per skewer.
