Ingredients

Scale
  • 1lb Ontario stewing beef
  • ¼ cup ghee
  • 1 onion, chopped
  • 3 cloves garlic, chopped
  • 5 whole cloves
  • 5 cardamom pods
  • 1 cinnamon stick
  • 1 clove mace
  • 1 bay leaf
  • ¼ cup Greek yogurt
  • 2 cups water
  • Kosher salt to taste
  • Fresh basil, for topping

Spice mix:

  • 2 tsp cumin
  • 1 tsp coriander
  • 1 tsp garam marsala
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp ginger powder
  • ¼ tsp ground black pepper

Instructions

  1. Preheat the oven to 325°F.
  2. Pat the stewing beef with a paper towel to remove excess moisture. Place a Dutch oven
over medium- high heat and add ghee. Once melted, brown stewing beef on both sides
until brown, then set aside. Reduce the heat to medium.
  3. Immediately add in the onions and garlic and saute for 2 minutes, using the onions and
garlic to scrape up the browned bits. Add in cloves, cardamom pods, cinnamon stick,
mace and bay leaf and incorporate into the mixture for another minute until slightly
toasted. Add in the spice mix and stir, then stir in the Greek yogurt and mix until
    incorporated.
  4. Add in water to soak up the spice mixture, then return the beef to the Dutch oven.
Season generously with kosher salt. Cover the Dutch oven with the lid and place in the
preheated oven for 1 ½ – 2 hours, until the sauce is reduced.
  5. Top with fresh basil and serve with rice, or side of choice.
